pm Caffeine sugar and water interact at the molecular level to affect the taste of hot beverages in coffee (Source: Thinkstock Images) Top News The sugar in your cup of coffee not only gives a sweet taste but also helps reduce the bitterness of tea and coffee new research reveals Scientists from the University of York have provided new insights into the way in which caffeine sugar and water interact at the molecular level to affect the taste of hot beverages Appreciated for its “reviving” stimulant effect is however also in part responsible for the bitter taste in tea and coffee The caffeine molecules tend to stick to each other when in water and this tendency is further enhanced by the addition of sugar For many decades scientists have assumed that this was due to the strengthening of bonds between water molecules around the sugar But Seishi Shimizu from the university’s department of chemistry found that the underlying cause is the affinity between sugar molecules and water which in turn makes the caffeine molecules stick together (or aggregate) in order to avoid the sugar “This is why we experience less of their bitter taste Proper understanding of the fundamental rationale behind this process may assist food scientists in many ways” he explained He used statistical thermodynamics – a branch of theoretical physical chemistry linking the microscopic realm with the everyday world – to investigate the molecular-level activities and interactions behind our daily food and drink “Encouraged by this discovery we are working hard to reveal more about the molecular basis of food and cooking” Shimizu added in a paper published in the journal Food and Function For all the latest Lifestyle News download Indian Express App More Top NewsWritten by perfectly healthyresearchers said on Monday They said the findings could lead to new ways to identify people most likely to develop Alzheimer’s diseasewhen there is still time to do something about it “The hope is to one day be able to diagnose very clearly the Alzheimer’s disease process before any symptoms occurwhen the brain is still healthy Then the treatments would have the best chance of success” said Lisa Mosconi of New York University Langone Medical Centerwhose study appears in the Proceedings of the National Academy of Sciences The team wants to continue to follow the people in the study to see whether they develop dementiaand they want to replicate the findings in a much larger study Several teams have been working on better ways to detect early-stage Alzheimer’s disease in hopes of developing drugs that can fight it before it causes too much damage Current treatments cannot reverse the course of Alzheimer’sa mind-robbing form of dementia that affects more than 26 million people globally Mosconi’s team used an imaging technique called positron emission tomography or PET with a fluorescent dye called Pittsburgh Compound B that lights up clumps of a protein called beta amyloid that are a hallmark of Alzheimer’s disease The team imaged the brains of 42 people with an average age of 65all with healthy brain function Of these14 people had mothers who had Alzheimer’s; 14 had fathers with the disease; and 14 had parents with healthy brain function Brain scans of all 42 showed that those whose parents — either fathers or mothers — had Alzheimer’s were more likely to have amyloid plaques in their brains This was especially true of people whose mothers had Alzheimer’s “They have pretty much 20 per cent more amyloid beta deposits in their brains In other wordsthey had an almost four times greater risk for amyloid beta pathology” Mosconi said in a telephone interview The finding confirms other studies that suggest having a mother with Alzheimer’s may be a greater risk factor “It looks like if you have maternal history of Alzheimer’s diseasethe risk of amyloid beta plaque and a reduction in brain activity is much greater as compared to having a father affected” Mosconi said After advanced agea family history of Alzheimer’s is the single biggest risk factor for developing the disease Not everyone who has beta amyloid plaques in their brain develops Alzheimer’s diseasebut Mosconi said having the plaques does increase the risk For all the latest Lifestyle News download Indian Express App More Related NewsWritten by Reuters | Published: rate in particular rising about two percent each year Yet the overall rate of cancers in that group is still small One in 173 women will develop breast cancer before she turns 40said researchers whose report appeared in the Journal of the American Medical Association – but the prognosis tends to be worse for younger patients The studyled by Rebecca Johnson at Seattle Children’s Hospital and University of Washingtonfound that the rate of metastatic breast cancer in particular rose about two percent each year between 1976 and 2009 among younger women “We think that the likelihood is that since this change has been so marked over just a couple of decadesthat it’s something externala modifiable lifestyle-related risk factor or perhaps an environmental toxic exposurebut we don’t know what” Johnson said One possibility is that overeating and lack of exercise are driving up early-life metastatic breast cancer ratesJohnson added Orthe use of hormonal birth control could play a roleshe said But Johnson also pushed for more research into the potential effects of hormones in meat or plastic in bottlesfor example Johnson’s team analyzed data from cancer registries run by the National Cancer Institute As expectedthey found that the number of early breast cancer diagnoses increased among middle-aged and older women during the study periodlikely due to widespread screening The only other change in cancer incidence was among the youngest womenbetween ages 25 and 39 In that groupthe number of women diagnosed with metastatic breast cancer – which has spread to the bonesbrain or lungs – rose from one in 65000 in 1976 to one in 34000 in 2009 More of the increase appeared to be in cancers that are sensitive to estrogenwhich is “comparatively fortunate” the authors notebecause those cancers are somewhat more responsive to treatment and have longer average survival rates in general Stillmetastatic cancer is the most dangers kindwith fewer than one-third of women surviving at least five years after diagnosisJohnson’s team wrote But surgeon Julie Margenthalerwho has studied breast cancer in young women at the Washington University School of Medicine in St Louissaid the new study was limited by a lack of data on women’s family historyincluding which ones were carriers of BRCA gene mutations Women with those mutations are known to be at high risk of developing breast and ovarian cancer at a young age “It is intriguing databut I think that it’s going to have to be validated in some other datasets” said Margenthalerwho was not involved in the new research Both she and Johnson agreed that since the number of women involved is still smallthere’s no need for the findings to either cause alarm or change standard mammogram practices Johnson said women should still be aware that cancer can happen at an early ageeven if screening isn’t recommended “Women need to notice changes in their bodies – breast lumpsfeeling bad – and promptly seek medical attention for those” she said “There’s a tremendous survival improvement associated with diagnosis before the cancer spreads” For all the latest Lifestyle News download Indian Express App More from the customer” A company official added that Airtel is preparing to submit a detailed response to the Unique Identification Authority of India (UIDAI) within the stipulated deadline The Aadhaar-issuing body the UIDAI had slapped notices on Bharti Airtel and Airtel Payments Bank in this regard in September A UIDAI source said the company’s initial reply was not satisfactory necessitating the need for seeking further explanation According to the UIDAI source Bharti Airtel has been given time till December 4 to explain why action should not be initiated against it including imposition of penalty on the issue The UIDAI official who did not wish to be named said that authority had found prima facie “wrongdoings” on the matter When contacted UIDAI CEO Ajay Bhushan Pandey said “We have issued notice to a telecom operator and are awaiting their response After giving full opportunity of hearing to the company concerned we will take judicious view of the matter” Pandey however did not identify the operator saying the issue is under examination To an e-mail query by PTI an Airtel spokesperson said the re-verification of mobile phones and the opening of Airtel opened by a customer the DBT automatically gets routed to it” Airtel said adding that such subsidy credit is also brought to the attention of the customers through a message or automated call It may be recalled that the UIDAI had shot off a notice to Airtel in September warning that not taking consent and informing the purpose of authentication was a violation of the Aadhaar Act and punishable with financial penalties In the notice served at that time the UIDAI had said it had come to know that “Airtel retailers are allegedly opening Airtel payments bank accounts at the time of performing Aadhaar e-KYC verification without informing the purpose of e-KYC and also without taking informed consent of the customer” It also asked both Bharti Airtel and its payments bank entity to take immediate corrective measures and report back to the authority on the same The move came after complaints were made to the UIDAI alleging that Airtel opened payments bank accounts without explicit consent of consumers and that the accounts were then linked for receiving LPG subsidy Airtel Payments Bank was the first payments bank to go live in the country when it rolled out banking services
